Quick & Healthy Breakfast


Chia Chia - Chia Seeds



Recipe inspired by Lizze Fuhr from POPSUGAR


1/4 cup Chia seeds
1/2 Coconut Milk
1 Tbsp Honey

Left overnight in the fridge and in the morning I topped my chia pudding with granola and blueberries! I doubled this recipe as I shared a couple servings with my fiancĂ© and lasted for 3 days! Time to make another batch. 

I always get so bored with breakfast food. It's either too much dairy or too much potatoes, this is not any of those two. I try to mix things to make my breakfast appetizing and this definitely will make it on my rotation and onto my in the making home "breakfast menu".

Journey to Health & Fitness - The Introduction

Summer of 2014 I was able to test my limits. I started meeting a personal trainer and met him three times a week at 5:30am! I was able to feel how strong my body was and it felt great to know that I'm using my body to its potential. It was a great streak of strong body and mind. 

Then Fall 2014, I started graduated school at University of Washington to study Education Policy in United States context.  Ever since then, I have been working my stretching brain muscles by understanding of how policies are designed and created, and how policies are implemented and evaluated, but haven't been moving my limbs much and I'm feeling weak. 

I'm finishing up with my Masters this summer and I just started a big girl job as a Program Manager for Youth Development work in King County. I'm starting to have more time to practice balance in my life and put my health and fitness back to its position. 

I will practice patience with my body.
I will love the process I will take. 
I will exude positivity.

Hello and Welcome

I'm Karen Terrado aka @verykaren on Instagram, Twitter and Snapchat. I've always wanted to document my life to share my stories and experiences both good and bad. For almost a decade now, I've started this journey of schooling in United States, and I wanted to write my experiences and how I've maneuvered through it all - my growth and learning, my struggles and obstacles, but homework got on the way of making my blogging a reality. After completing my Associates from Community College, Bachelors and Masters from the University... I think I'm finally done with school ... at least for now or maybe forever... I am ready to get the blogging on!

I'm not only passionate about schooling in United States, but also with Beauty & FashionLove & RelationshipsHealth & Food, #AdultingIsReal. All colorful and dull things about life! I'm so excited to see where this blog will take us, follow and share along!

RUNNING, Isn't my thing!



Training for Half Marathon


But when I do it I feel this rush of power through my veins. The beauty of accomplishing something that is both physically and mentally challenging. It was a feeling of endurance and awakening! My longest race was during Seattle 2013 Seafair, an 8K packed with so much emotions, something I thought I couldn't really do. 

So you might ask, why run a half marathon? Well I think we should always challenge ourselves, to use our bodies to its fullest capacities while we can and to keep our minds engaged and focused. This summer I started meeting a personal trainer where we worked on strength training, I felt like I was using parts of my body that I haven't used in my life and it felt great! I also got into Zumba where I felt free and can fully expressed ME! 

Lately, I have been stuck in funk - I stopped being physically active. I really want to go back to my routine and keep at it. I think setting a goal to run a half marathon will help me get there. I will be starting this training Dec 1st and I'm currently in the process of finding a race to sign up for, somewhere in Pacific Northwest.
